Mühlstätter's "Henkele"
The gastronomic experience from East-Tyrol’s mountains.
The “Henkele” is an air-dried and smoked specialty made of beef, deer, lamb or wild pig meat, amongst which the “Henkele”- made with chamois meat – is probably the real gem.
The characteristic of the “Henkele” is that the smoking process takes place without the help of chemical additives; only with salt and noble spices, without foreign energy and with hardwood: exactly as at grandfather’s times.
The climate and the fresh mountain air complete the manufacturing process and give the “Henkele” their unique, unforgettable taste.
With the success of the “Henkele” a new experience is opened to the connoisseurs and nature-lovers to enjoy a piece of the national park and to get in touch with the pure rural alpine world.
The “Henkele” can be kept at a storage temperature of 15 degrees Celsius up to six months.
“Henkele” unfold their complete aromatic bouquet when thinly cut and in combination with wine, cheese, black or white bread are a rare gastronomical experience. 100 grams of “Henkele” contain less than 100kcal and less than 5% fat.

The Mühlstätters are genuine and hard-working, like the other people of East Tyrol. Beside the traditional butcher's with meat and sausages and the snack bar, our enterprise has the only slaughterhouse in East Tyrol. We manufacture 95% of the gastronomic specialties you can find in our shop and work exclusively with cattle coming from the farmers of our region. Controlled quality from Austria stands for us in first place. 15 co-workers are our strength and the “Henkele” our pride.
